Birda Mae's Recipe Corner:Thai Coconut Shrimp Soup

Ingredients:


  • 3 cups low sodium chicken broth
  • 1 14 oz. can unsweetened light coconut milk
  • 1 tsp. red curry paste
  • 1 Tbsp fish sauce(nahm plah)
  • 2 tsp grated fresh ginger (substituted with 1 tsp of ground ginger)
  • 1 garlic clove
  • 1/2  tsp kosher salt(or regular table salt)
  • 1 cup 4 oz. green beans cut into pieces
  • 3/4 lb. medium shrimp peeled and devined
  • 2 scallions thinly sliced
  • Lime wedges
Directions:

  1. In a medium pot over medium high heat ,combine chicken broth, coconut milk,curry paste, fish sauce, ginger,garlic and salt.Bring to a boil;then reduce to a simmer.
  2. Add green beans and cook 2 minutes.  Add shrimp and cook until pink, 5 minutes. Top soup with green oninons and serve  with lime.  Make 5 cups.

My fondest memoreis in my life are the ones at my grandmother's table.I loved not only the warm,velvety ,slightly sweet 7-up cake, but the affirmation that I was loved. What started out as a creative outlet and a place to honor her loving,generous spirit has evolved into a food blog where I can blather on about recipes, food trends, and basically any food related topic that foodies would like, ....you get the idea. I am sure my family and anyone I've been friendly with for more than 2 minutes will breathe a collective sigh of relief, since I don't have to dump my food conversations on them all the time.
