Wow imagine my surprise when I was  stopping by thepunkrockmom.blogspot.com and saw my blog
as one of the  winners!  ( How cool is that?)I believe the rules are to tell 7 things the bloggy world

Birda Mae's Recipe Corner: Sandra Lee's Lemon Blueberry Cake


Ingredients

  • 2(8 inch ) round store bought yellow or white cake layers
  • 1/3 cup frozen lemonade concentrate,thawed
  • 2 teaspoons lemon extract divided
  • 2(12ounce) cans cream cheese flavored frosting
  • Fresh mint sprigs
  • Fresh blueberries
  • lemon slices,quartered
Directions:

  1. Use a knife to slice cake layers in half horizontally.
  2. Use a pastry brush to brush each layer with lemonade concentrate
  3. Set aside.
  4. Stir 1 teaspoon of lemon extract into each can of frosting;set aside
  5. To assemble cake: Frost and stack the cake layers on top of each other
  6. Decorate cake with mint sprigs,blueberries,and quartered lemon slices

black and white Wed@Long road to China

This is my first Black and White Wed.  with Long Road to China
This was taken almost 2 and 1/2 weeks ago.  It was hot as all get up
(Heat index altleast 101)  .  Why do I keep bringing up the heat index?
The heat index is the temp. that it actually feels like .  It could be 94 degrees but if
the heat index says a 100 then that's what it actually is.  I say all that to say this . I was not going to be
blowing bubbles for very long outside.  If  you're looking for the cupcake recipe it's in the post below this one

Birda Mae's Recipe Corner:Sandra Lee's Black Forest Cupcakes





Black Forest Cupcakes



     Ingredients:


  • 1 (18.25 ounce) box of devil's food cake


  • 1 1/3 cups black cherry soda


  • 1/2 cup vegetable oil


  • 3eggs


  • 1 container of vanilla frosting


  • 2 teaspoons cherry extact


  • 1 to 2 drops pink food coloring
24 whole marashino cherries with stems


Directions

Preheat oven 350 degrees F. Line 2(12 cup)muffin tins with paper liners.
In a large bowl combine cake mix, soda, vegetable oil and eggs.
Using a hand mixer combine all ingredients batter will still be lumpy.
Pour batter into muffin cups. Bake 19 to 22 minutes,turning the pans
halfway through baking . remove to a rack and allow to cool completely.

In a large bowl combine frosting ,extract and pink food coloring
When cupcakes are cool  ice with pink cherry frosting  and top each with maraschino cherry.

My variation of Sandra Lee's Catfish Sandwhich

 


This is a variation of the recipe I posted last Tuesday on the 1oth . For my variation I used Fish fry instead of the cornbread mix
and I wasn't sure about the Remoulade sauce since Ihave some picky eaters. So they had the option of the Tarter sauce with lemon and herbs or the chipolte mayo both by Kraft. Instead of Catfish I used Cod because it was on sale at Krogers and since Ihad the hamburger buns I used those . It came out pretty good although I probably could 've just used the fish fry. I may even try this with sourdough bread

Birda Mae's Recipe Corner:Sandra Lee's Pina Colada Pie




Ingredients:
3/4 cup pineapple-coconut nectar
1 cup light coconut milk
1 1/2 teaspoons rum extract divided
1 3/4 box instant vanilla pudding and pie filling
1 cup shredded coconut
8 ounces whipped topping
1 9 inch pie crust ,baked
1/4 cup shredded coconut for garnish

Directions
In a large bowl ,combine nectar,coconut milk,and teaspoon rum extract sprinkle pudding mix over liquid and whisk for 2 minutes

Fold in coconut and 1/2 the whipped topping
Pour into  pre-baked pie crust and chill in refrigerator for atleast 3 hours

Combine remaining whipped topping with 1/2 teaspoon rum extract
Top chilled pie with whipped topping and toasted coconut

Art Journal page : A use for those leftover scrapbook paper


I got the idea from Teach yourself visually collage and altered art .  Actually she had tons of ideas for me it was difficult to decide which technique to try first Actually you can do this with other kinds of paper but because I had some leftover Basic Grey Paper I thought this would be a good use .It's also  break from painting in my journal all the time anyway.  Stay tuned for some upcoming recipes

Random Notes:Astros vs the Braves


I got  some free tickets to the Astros vs the Braves game .  (Thanks Arc of Houston) I gotta tell you this
was probably one of the better moments of this summer!  The thrill of being in the crowd .  I mean you can
actually feel the anticipation.  Besides late at night is the best time to move around in Houston( Have I mentioned the heat index  has been up to 104-110?)  It's funny Joshua has never been to a sporting
event and when we were in line to get hot dogs and heard the game starting he was really about to freak!
Aliyah and Zaria are the ones in the other picture.  They really weren't all that excited to be there in fact that was probably the most excited look the whole time .  Any way I may come back in September  I believe
we play on the 13th .Anyway stay Gold!

Birda Mae's Recipe Corner:Sandra Lee's Catfish Sanwiches with Remoulade


Ingredients
1 1/2 pound catfish fillets, rinsed and patted dry
1 box(8.5 oz) cornmuffin mix
2Tablespoons Cajun Seasoning
1 egg
1/2 cup all purpose flour
Canola oil for frying

Remoulade
1 scallion,finey chopped
1 1/4 cups mayo
1 Tablesoon capers finely chopped
1 teaspoon Cajun sasoing
1/2 teaspoon crushed garlic
2 1/2 teaspoons of lemon juice

Sandwiches
1 loaf store bought garlic bread baked per package directions
Butter lettuce
Sliced tomatoes
Sliced red onions

Catifish (directions)

Cut catfish fillets in half, set aside
In a pie dish or plate combine muffin mix and Cajun seasoning set aside.  In a pie dish lightly beat egg
with teaspoon  of water to make egg wash  set aside

Dredge each catfish fillet in the flour ,dip into egg wash and coat with corn muffin mixture
In a deef fryer or large pot heat oil over medium  to medium high heat to 375 degrees
Fry catfish until golden brown, about 6 minutes.  Remove to plate lined with paper towels
Cajun Remoulade
In a small bowl,stir together all ingredientss Set aside

Sandwiches 
Spread warm garlic bbread with Remoulade sauce.  Build sandwiches with Fried catfish and Remaining ingredients

Book Review:Creating Keepsakes Creativity Tips for Scrapbookers

Creativity Tips for Scrapbookers (Leisure Arts #15951) (Creating Keepsakes)This is a compilation of the best of the best  from the 2005-2007 issues when Tracy White was the editor I didn't  discover Creating Keepsakes until early 2006 ,but for me this was pivotal in my decision to really embrace scrapbooking.   I use to hang on to programs from plays ,movie tickets or stuff that I would decoupage onto a shoe box to have a visual reminder.  Everything else went into a photo album.
So fast forward to 2006 where I was just discovering that I should preserve these memories for my kids.
My Father died March 1988 .  There are so many things I'd love to know about him .  Little things .  Now
with the more recent death of my grandmother in 2009 seems to emphasize the importantance just that much more.  However even with the best reasons to scrapbook I often get stuck.  I felt this was just what I needed

  I am doing Sandra Lee all this month so if anyone would like to see
something in particular let me know!  I am  busy mama and the idea that I can spruce up food that's
prepared already appeals to me on so many levels!  I dont know about dying the cake I may just buy twinkies and go from there .  Anyway Enjoy!
